Broccoli & Lemon Risotto

Easy risotto & great dish for potluck

Servings:

Total Time:
1 hour

Ingredients:
1 1/2 lb broccoli, cut into small florets
1 med. onion, chopped
2 cups brown rice
7 cups vegetable or chicken broth
1 cup dry white wine
1 Tb. olive oil
4 Tb. lemon juice
1 tsp. lemon zest
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Steam broccoli florets until crisp (don't overcook). Saute onions and broccoli until onions are tender. Cook the rice in vegetable broth, wine, olive oil, lemon juice and lemon zest. Add broccoli after rice is cooled. Season with salt and pepper.

Cook's Notes:
Great potluck dish or side anytime.
