Green Chile and Rice Casserole

Rice casserole

Total Time:
1 hour

Ingredients:
1&1/2 cups long grain rice
1 tablespoon butter
1 jalapeno pepper, finely minced (optional)
1 onion, chopped
1 (8oz) can peeled green chilies
1 cup sour cream
1 cup cheddar cheese

Directions:
Cook rice according to directions, and set aside. Saute onion and jalapeno pepper in 1 tablespoon butter, until onions are clear. Layer in oiled 9X13 inch casserolde as follows: Rice, onions, green chilies, sour creamd and cheese. Repeat layers if you are using a deep casserole dish.

Bake at 350 degrees for 20 to 30 minutes or until cheese has melted.

Cook's Notes:
Once you make this casserole the first time you will make it again and again. It is great with any entree or by itself with a salad.
