German Bean & Sausage Soup

Hearty vegetable soup with turkey sausage

Ingredients:
1 teaspoon oil
1/3 cup chopped onion
2/3 cup sliced carrots
2/3 potato, peeled, cubed
1 tablespoon dried parsley
1/4 teaspoon dried marjoram leaves, crushed (or substitute oregano)
9 oz. beef broth (or beef bouillon)
8 ounces smoked turkey sausage, cut into 1/2 inch slices
1-10 oz can Great Northern Beans, undrained
1-14.5 oz can cut green beans, undrained
Directions:
Heat oil in a saucepan over medium heat. Add onion and saute 4-5 minutes, stirring frequently until tender. Add carrots and next 4 ingredients. Season with salt and pepper to taste.
Bring to a boil; reduce heat to low, cover and simmer about 15 minutes or u ntil vegetables are tender.
Add sausage and beans. Cook until thoroughly heated. Add additional salt and pepper if needed.
