Chicken Fajita Soup

Very rich Mexican soup

Ingredients:
1 large onion, chopped
4 tablespoons butter
1 roasted chicken, skin and bones removed, chopped
1 large can whole kernel corn, drained
1 can Rotel Tomatoes
1 can diced green chilies
1 large can diced tomatoes
32 oz chicken stock
1 teaspoon cumin
2 tablespoons McCormick Fajita seasoning
16 ounces sour cream
3/4 of large block of Velveeta cheese
Directions:
Saute the onion in butter in stock pot. Add and stir all ingredients together and make sure cheese is melted well. Simmer about 30 minutes and enjoy
