Nice Mexican flavor soup--Meal in One

Total Time:
1 hour

Ingredients:
3 pounds lean pork, cubed
1 medium onion, chopped
2 cloves garlice, minced or pressed
1 tablespoon olive oil
1 teaspoon whole comino seeds, crushed
1 (16 oz) can whole tomatoes
1 (10 oz) can Rotel tomatoes, diced
3/4 cup water
1 green bell pepper, cut in 1/4 inch strips
3 pounds calabacita (Mexican Squash)
1 (16 oz) can whole kernel corn
salt and pepper to taste

Toppings:
Picante Sauce
Crumbled corn tortillas
Crumbled tortilla chips
Grated Cheddar or Jack Cheese
Chopped onion

Directions:
Brown pork in oil with onion and garlic. Add comino, tomatoes, Rotel tomatoes, water and bell pepper. add salt and pepper to taste. Simmer 15 minutes. Wash and dice calabacita. Add to the meat mixture. Simmer 15 minutes. Add corn and simmer 5 minutes. Add toppings just before serving.

Cook's Notes:
Serve with hot tortillas.
You may use chicken breast meat in place of pork in this recipe.
