Tex-Mex Creamed Corn

corn with sweet red pepper, jalapeno, spices and heavy cream

Total Time:
30 minutes

Ingredients:
3 tablespoons butter
1 small onion, diced
1 medium sweet red pepper, diced
1 jaoapeno pepper, diced
spinkle of salt and sprinkle of black pepper
2 minced large garlic cloves
3 cups fresh korn kernels, with juice
1 tsp ground cumin
1 tsp smoked paprika
1/4 cup heavy cream
2 ounces cream cheese

Directions:
Melt the butter in a large saute pan. Add onion, sweet pepper and jalapeno pepper. Cover the pan and sweat the veggies over medium-low heat for about 5 to 7 minutes. Add garlic and cook one minute. Add corn kernels and any juice. Cook over low hear for a few minutes and add remaining ingredients. Mix well but gently so as not to squash the corn too much. Cover the pan and simmer for about 6 to 8 minutes. Taste and adjust seasonings.
