Shredded broccoli with Indian spices

Stir fry broccoli coleslaw, onions, spices and lemon juice for this nice side dish.

Total Time:
30 min.

Ingredients:
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
1 teaspoon cumin seeds
1/4 teaspoon tumeric
Pinch of cayenne pepper
4 cups broccoli coleslaw
1 tablespoon lemon juice
3 tablespoons water
Salt and freshly ground pepper to taste

Directions:
In a large nonstick skillet, heat oil over medium-high. Add the onion and saute until soft about 4 minutes.

Add cumin seeds, tumeric and cayenne pepper and cook until the spices are fragrant, about 1 minute longer.

Stir in the broccoli slaw, lemon juice and water.

Reduce heat to low, cover the skillet and let the mixture simmer gently until the vegetables are tender, about 5 minutes.

During cooking, add water if necessary to prevent sticking. Season with salt and pepper.
