Stir-Fried Asparagus

Asparagus stirfried with garlic

Total Time:

Ingredients:
1/2 cup low-sodium chicken broth
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2&1/2 tablespoons peanut oil (divided use)
1&1/2 pounds asparagus, tough ends snapped off and cut into the biast into 1&1/2 inch pieces.
3 medium cloves garlic, minced

Directions:
Mix broth, salt and pepper in a small bowl, and set aside.

Heat 2 tablespoons peanut oil in large heavy bottomed skillet over high heat until almost smoking. Add the asparagus and cook, stirring frequently, until well browned, about 5 minutes.

Clear a space int he center of the pan, add the garlic and drizzle with remaining 1/2 tablespoon of oil. Cook until fragrant, about 30 seconds, and the mix together with the asparagus. Add the broth mixture and toss to coat the asparagus. Cook until the sauce is syrupy, about 30- seconds.
