Cajun Smothered Okra

Yummy okra and tomatoes recipe

Total Time:
1 hour

Ingredients:
2 pounds okra, thinly sliced
2 medium onions, chopped fine
2 medium bell peppers, chopped fine
6 ripe tomatoes, peeled, seeded and routhly chopped
salt and pepper to taste
3 cups water
1 teaspoon white vinegar

Directions:
Place all ingredients in Dutch oven or other large, heavy pot. Stir well.

Bring to simmer over medium heat. Reduce heat, cover and simmer until okra is tender, about 45 minutes to 1 hour. Stir occasionally and, if needed add a little more water. If there is too much liquid when vegetables are done, remove lid and let some of it evaporate.
